Crockpot meals save a lot of time in cooking and can create plenty of leftovers, and I’m wondering why I don’t take advantage of that perk more often! If you’re looking for something additional to your taco night, or just something to add to your meal planning, try this chicken carnita recipe! Whether you use a slow cooker or an instant pot, this recipe provides instructions for both! In a few hours you can have a great meal option to add in your taco night, or mix into salads, or just eat plain when you are on the go!

Coconut Water Benefits
Coconut water is a beverage gaining more popularity, showing up heavily in smoothie beverage locations. What’s all the hype about with coconut water?
First and foremost, coconut water is harvested from a young, green coconut. As a coconut matures, it gets replaced with coconut “meat”, which can be made into coconut milk. Coconut water is loaded with electrolytes, which is why I’m going to start recommending to my clients that they add this as a liquid to their smoothies. Add the coconut water and the coconut milk into your smoothie, you have a recipe loaded with electrolytes and healthy fats!

Calories: 46
Carbohydrates: 9 g
Fiber: 4.6 g
Sugar: 6.3 g
Fat: 0.5 g
Protein: 1.7 g
Sodium: 252 mg
Vitamin C: 34 mg
Potassium: 470 mg
Magnesium: 600 mg
Calcium: 58 mg

Besides being high in electrolytes, coconut water comes with many other benefits, including:
Lowers blood pressure
Lowers cholesterol and triglycerides
Cleanses and detoxes
Reduces stress and muscle tension (thank you magnesium!)
When buying coconut water, here are some things I would suggest.
If possible, look for coconut water in a fresh, green coconut instead of a packaged variety
The second best option is to find cold pressured coconut water - only slightly processed via high pressure processing instead of heat
If coconut water does not need to be refridgerated, it usually means it’s been pasteurized to maintain its freshness
Avoid anything from concentrate - most loss of nutrients during the processing
Stay away from anything that has added anything - flavors or sugars
